in the meantime, here's a quick recipe that has become a FAVORITE around our house!
surprise, surprise, i found this recipe on pinterest and as part of my on-going resolution to ACTUALLY MAKE stuff i've pinned, i added this to our frequent meal rotation a month or so ago. as you all know, i very rarely follow a recipe to a t, so i'll give you the original recipe from skinnytaste.com if you want to see how she did it originally:)
baked chicken nuggets:
- 16 oz (2 large) skinless boneless chicken breasts, cut into even bite sized pieces
- salt and pepper to taste
- 2 tsp olive oil
- 6 tbsp whole wheat Italian seasoned breadcrumbs
- 2 tbsp panko
- 2 tbsp grated parmesan cheese
- olive oil spray (she uses Misto)
preheat oven to 425, spray baking sheet with olive oil spray.
set up your breading stations. one bown with the olive oil, another with the breadcrumbs, panko and parmesan in the other.
season the chicken with s and p, and toss in the olive oil. cover with the bread crumb mixture and put them on the cookie sheet, lightly misting them with the olive oil spray.
bake about 8 - 10 minutes, then turn.
VOILA! easy, peasy.
i do WAY more than two chicken breasts. these things freeze beautifully and are a super, duper easy lunch for brice...or her daddy:) if you intend to freeze them, i would leave them just slightly under cooked so you can reheat them in the oven. they taste MUCH better that way than in the microwave.
i put the salt and pepper in the bread crumb mixture to save a step and have also added a little chili powder to mix it up. last time, i actually forgot the parmesan cheese and they were still amazing. just play around and see what your kiddos - and you! - like!!
